STARTERS:

Wye Valley asparagus, hazelnut, miso, balsamic, Rachel, rye and hazelnut sable

or

Cured Chalk Stream trout tartare, Longley Farm crème fraîche, blood orange, rock samphire, pickled sea purslane, trout roe, lavosh cracker

or

Spring duck salad, Trill Farm leaves, wild garlic, anchovy, croutons


MAIN COURSES:

Confit Haye Farm lamb neck fillet, chickpea, mint labneh, black garlic, dill and wild garlic salsa verde, burnt cucumber

or

Pea, asparagus risotto, smoked ricotta, seaweed, wild garlic

or

Lyme Bay gurnard fillet, crab bisque, pak choi, turnip, kaffir lime leaf

(£5 supplement)

DESSERT:

Chocolate, almond and rum torte, salted caramel ice cream, dandelion and walnut syrup
